Vegan Cherry Cake with Lemon

So Easy to Make

Using cherries in season really adds to the flavor of this recipe. The least attractive cherries will be put to good use.

A lot of attention is being paid to the health benefits of foods, such as the cherry. Research done at the University of Michigan, has shown that this humble fruit actually packs a lot of punch. The anthocyanins in the cherry are full of antioxidants. These antioxidants are thought to be responsible for lowering bad cholesterol, lessening the risk of heart disease, and helping to fight obesity. Cherries are high in fiber and beta carotene. They are also high in vitamin C.

There is also evidence that these anthocyanins help to reduce gout and arthritic pain. Finally, cherries contain naturally occurring melatonin. This is an antioxidant which helps the body to relax, and sleep better. This is why they are credited with helping with jet lag. It is also said they are good for memory loss.

Lemons are another fruit which is thought to have properties that ease arthritis, reduce the risk of heart disease, and cancer. They, too, are high in vitamin C.

Combining these fruit actually heightens the flavor of this recipe.No animal products are needed to make this cake, either. This goes one step further in providing a heart healthy alternative to the typical dessert; that is also easy to make. Be sure to use organic flour, and baking soda. Safflower oil can be used as a substitute for olive oil, although the olive oil will not overpower the flavor at all.

List of Ingredients

  • Juice of 1/2 lemon
  • 25 cherries, pitted and chopped
  • 11/2 cups organic flour
  • 4 ounces olive oil
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon flax seed powder
  • 2 ounces water or fruit juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda

Baking Instructions

  1. Peel each cherry around its pit, like an apple would be peeled. When all of the cherries are done, they can be chopped into smaller pieces and set aside. The flax seed powder should be mixed with a little water to set ahead of time. This mixture will be used as an egg substitute.
  2. Combine the olive oil and sugar together, with a large spoon. Next, add the vanilla extract, flour, salt, baking powder, baking soda and flour. Add the liquid, including the lemon juice, flax seed mixture, and cherries; taking care to mix well.
  3. Place the mixture into a lightly oil pan, and bake in a 350 degree oven for 50 minutes. Remove from heat, and cut into small pieces. Remove from the pan, to cool on a rake. Store in airtight container, and refrigerate any leftovers.
