Recipes for Egg and Dairy and Free, Vegan Applesauce Desserts

Apples and applesauce make moist, sweet muffins that you can enjoy when apples are in season, or any time of year.

Both of these apple recipes are free of eggs, dairy, and trans fats, making them perfect to serve to vegans, people with allergies, or just about anyone who likes muffins. However, you may substitute dairy milk for the soymilk if you wish.

Be sure to use applesauce with no added sugar, since it’s sweet enough as it is.

Mouthwatering Apple Muffins

These delicious muffins are loaded with cinnamon, vanilla, and wholesome chunks of apple. This recipe is a great way to use up apples that are a little past their prime, since the baking process makes them moist and fluffy. You can vary the spices as you like, by adding (or leaving out) the allspice, nutmeg, or ginger.

Ingredients:

Prepare to Bake:

Lightly spray a muffin pan with cooking spray, or fill the pan with cupcake liners. Preheat the oven to 350 degrees.

Make the Apple Muffins:

  1. Mix the flour, sugar, baking powder, baking soda, and spices together in a large bowl.
  2. Mix the soymilk, applesauce, canola oil, and vanilla together in a small bowl or large measuring cup.
  3. Add the wet ingredients to the dry ingredients and stir.
  4. Peel and chop the apples and add them to the batter. Stir just long enough to mix the apples into the batter.
  5. Spoon the batter into the muffin pan.
  6. Bake at 350 degrees for about 15 minutes, or until a toothpick inserted in a muffin comes out clean.

Let the apple muffins cool for 5-10 minutes before removing them from the muffin pan.

Extra Applesauce Muffins

These applesauce muffins are super moist. You can add raisins, or even chopped nuts, if you like.

Make the Applesauce Muffins:

  1. Mix the flour, sugar, baking powder, baking soda, and spices together in a large bowl.
  2. Mix the applesauce, soymilk, and canola oil together in a small bowl or large measuring cup.
  3. Add the wet ingredients to the dry ingredients and stir.
  4. Mix in the raisins or chopped nuts (optional).
  5. Spoon the batter into the muffin pan.
  6. Bake at 350 degrees for about 15 minutes, or until a toothpick inserted in a muffin comes out clean.

Let the applesauce muffins cool for 5-10 minutes before removing them from the muffin pan.
