Forget gingerbread - these Christmas Spice Cookies knock traditional holiday cookies off the charts! They are sweet and spicy, and 100% guilt-free. As with any vegan recipe, these cookies are free of dairy and eggs, which also makes them more accessible to those who suffer from common food allergies. The aroma alone will have your taste buds tingling as you bake these beauties. If you prefer your cookies to be on the softer side, leave the dough a bit thicker when you roll it out, but don't overdo it - the flavours of all of these spices combined really do lend themselves to a crisp cookie. Think ginger snaps, but even better! The following recipe yields between 1 and 1 ½ dozen cookies, depending on your desired thickness. Ingredients:

Notes: If spice isn't your flavour of choice, or if you would just like a variety of cookies for your holiday dessert, this recipe can be easily altered to make Lemon Cookies. To do this, replace all of the dry spices (cinnamon, cloves, pepper, coriander, all-spice, and nutmeg) with 3 tsp of Lemon Extract and 1 tsp of Lemon Rind. Follow the rest of the recipe as above.These cookies resemble classic sugar cookies to a certain extent, though they have a stronger lemon flavour, and do not crumble. Instead, they have a zesty crunch to them that children and adults alike will enjoy! These cookies could be decorated with a simple icing, but doing so may risk making them overly sweet.
