Enjoy the flavours of Christmas without the guilt with these vegan (dairy and egg-free) spice cookies!

Forget gingerbread - these Christmas Spice Cookies knock traditional holiday cookies off the charts! They are sweet and spicy, and 100% guilt-free. As with any vegan recipe, these cookies are free of dairy and eggs, which also makes them more accessible to those who suffer from common food allergies. The aroma alone will have your taste buds tingling as you bake these beauties.

If you prefer your cookies to be on the softer side, leave the dough a bit thicker when you roll it out, but don't overdo it - the flavours of all of these spices combined really do lend themselves to a crisp cookie. Think ginger snaps, but even better!

The following recipe yields between 1 and 1 ½ dozen cookies, depending on your desired thickness.

Ingredients:

  • 1 C Vegan Margarine
  • 1 C Brown Sugar
  • 3 ½ C Flour
  • 2 "Eggs" (Recommended: Ener-G Egg Replacer - a potato and tapioca starch blend)
  • 3 tsp Vanilla Extract
  • 4 tsp Cinnamon
  • 3 tsp Ground Cloves
  • 1 tsp Ground Black Pepper
  • 2 tsp Coriander
  • 2 tsp All-Spice
  • 2 tsp Nutmeg
  • 1 tsp Salt
  • Christmas-Shaped Cookie Cutters

Method:

  1. Beat the margarine and sugar on high until creamy. Add in "eggs" and vanilla and blend thoroughly. Add in the flour and all of the spices and mix well with a spoon until all of the dry ingredients are blended in well. Separate the dough into three large balls and wrap in plastic wrap, then refrigerate for one (1) hour.
  2. Once the dough has been chilled, remove and roll it flat on a lightly floured surface to your desired thickness. Cut into shapes with cookie cutters, and place on a lightly greased cookie sheet. Bake at 350°F for approximately ten (10) minutes. Cool on a rack and enjoy!

Notes: If spice isn't your flavour of choice, or if you would just like a variety of cookies for your holiday dessert, this recipe can be easily altered to make Lemon Cookies. To do this, replace all of the dry spices (cinnamon, cloves, pepper, coriander, all-spice, and nutmeg) with 3 tsp of Lemon Extract and 1 tsp of Lemon Rind. Follow the rest of the recipe as above.These cookies resemble classic sugar cookies to a certain extent, though they have a stronger lemon flavour, and do not crumble. Instead, they have a zesty crunch to them that children and adults alike will enjoy!

These cookies could be decorated with a simple icing, but doing so may risk making them overly sweet. If you plan on dressing up your Christmas shapes, cut the sugar in the recipe just slightly and the result should be perfect.
