This delicious dessert recipe combines sweet, juicy fresh or frozen fruit with a fluffy, biscuit-like topping that's simple to make.
The cobbler topping also happens to be free of eggs, dairy, and trans-fat, so it’s perfect to serve to vegans, people on a low-fat diet, or those who just want a delicious, fruit-filled dessert.
This recipe makes a large fruit cobbler of 8 to 12 servings, suitable for a family gathering. However, you can easily cut the recipe in half and use a smaller baking dish to make a 4 to 6 serving cobbler.
You can make the cobbler from either fresh or frozen fruit, depending on what’s available. If you’re trying to use up fresh fruit, you can also make just the filling and store it in plastic containers in the freezer. That way, you can thaw it in the microwave or on the stove top and make the topping for a freshly baked cobbler all through the winter months.
Ingredients: Filling
- 2 quarts berries or sliced fruit
- 1/4 to 1/2 cup white sugar (optional)
- 1 Tbsp cornstarch (optional)
- 2 tsps cinnamon (for apples only)
Ingredients: Topping
- 1 1/2 cups flour
- 1/2 cup white sugar
- 2 tsps baking powder
- 2/3 cup vanilla soymilk
- 1 Tbsp canola oil
- 1 tsp vanilla extract
Supplies:
- Large cooking pot
- Large mixing bowl
- Measuring cup
- Stirring spoon
- 4 quart baking or casserole dish
Make the Cherry or Berry Filling
- Place two quarts of cherries, blueberries, or mixed berries in a large cooking pot.
- Add 1/4 to 1/2 cup of white sugar, or to taste. For sweet fruit, you may not need any sugar, but for tart fruit, you may need a bit more.
- Add 1 Tablespoon of cornstarch to the berries. You can adjust the amount of cornstarch depending on the juiciness of the fruit, and how thick you want the sauce.
- Cook the fruit over low heat, stirring occasionally, until the frozen fruit is completely thawed, or until the fresh fruit is slightly softened.
- Pour the fruit and sauce into a baking or casserole dish, then make the topping.
Make the Apple or Peach Filling
- Peel and slice the apples or peaches and place them in large cooking pot.
- Add 1/4 cup of white sugar, or to taste. (If you use canned peaches, you will not need any sugar.)
- Add 2 teaspoons of cinnamon to the apples. You can also add a sprinkle of nutmeg, cloves, allspice, or your favorite apple pie spice blend.
- Cook the fruit over low heat, stirring occasionally, until the frozen fruit is completely thawed, or until the fresh fruit is slightly softened. You may need to add a little bit of water if the fruit is dry, or a little bit of cornstarch if the fruit is very juicy.
- Pour the fruit and sauce into a baking or casserole dish, then make the topping.
Bake the Cobbler
- Mix the flour, sugar, and baking powder together in a large bowl.
- Mix the soymilk, canola oil, and vanilla extract together in a measuring cup.
- Add the wet ingredients to the dry ingredients, and stir throughly.
- Spoon and spread the cobbler topping over the fruit. It’s okay if there are some gaps in the topping.
- Bake the fruit cobbler in a preheated 375 degree oven for 20-30 minutes, or until the top is golden brown.
You can serve the cobbler warm, or let it cool and refrigerate it for later. You can then serve it cold, or reheat it in the microwave. A scoop of vanilla soy cream, ice cream, or whip cream is a delicious finishing touch for this fruity dessert.
